I came across this pizza recipe recently and thought it sounded interesting so we tried it out a few nights ago with a few changes that I’ve noted below. I have been requested not to make it again, not only because Stefan didn’t think the recipe had much flavor – but also because “chicken doesn’t belong on a pizza.” He did say that it wasn’t that bad when we had a slice of the leftovers…but I found it to be pretty gross then. This isn’t a recipe I’m dying to try again, even with modifications, but I did find it ok. Something is definitely missing though…maybe black olives, fresh basil or more Ranch dressing to dip the pizza in.

  1. Preheat oven to 500 degrees F (250 degrees C). Lightly grease a pizza pan or medium baking sheet. Put crust on prepared pizza pan or baking sheet and bake for 7 minutes, or until it begins to turn golden brown. Remove from oven.
  2. Either: drizzle chicken breasts with olive and broil until no longer pink. Chop or shred.
  3. OR Slice chicken breasts and cook in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear.
  4. Spread ranch dressing over partially baked crust. Sprinkle on mozzarella cheese. Place tomatoes and chicken on top of mozzarella cheese, then top with Cheddar cheese. Sprinkle garlic powder and ground chilies over pizza to your liking. Return to the oven for 20 to 25 minutes, until cheese is melted and bubbly.
